One more super easy that is similar, but a little different.

1 box spice cake mix
2 eggs
1 can pumpkin
about 1/8 C water
1 package cinnamon chips

Mix altogether, bake as muffins or the little loaf pans for about 20 minutes at 350. You can add raisins and/or nuts if you want.

My daughter and I made these a few days ago, and EVERYBODY just LOVED them! Even my hubby, who is not terribly wild about pumpkin in the first place, snarfed them down like there was no tomorrow!

PUMPKIN COBBLER

(This is GREAT stuff!! I even used splenda to make it for diabetic use. It doesn’t “puff up” as much and you need to add more Splenda to get a more ‘sweet taste’, but works fine in it. My husband's Grammy won't eat pumpkin pie..or anything pumpkin...but absolutely LOVES this dessert! lol )

The crust mixture rises to the top during baking to form a rich topping
FILLING:
2 eggs beaten
1 ½ c (12oz) evaporated milk
1 ¾ c (15 or 16 oz can) cooked mashed pumpkin (NOT pumpkin pre mixed filling)
2/3 cup white sugar
1 Tblsp flour
1 tsp cinnamon
½ tsp ginger
½ tsp nutmeg
¼ tsp salt

CRUST:
½ cup butter or margarine 1 cup all purpose flour
1 cup white sugar 4 tsp baking powder
¼ tsp salt 1 cup milk
1 tsp vanilla

TOPPING:
2 Tblsp white sugar


Preheat oven to 350º. In large bowl combine eggs, milk, pumpkin; add the rest of the filling ingredients and mix well and set aside. Prepare the crust. Melt the butter in a 9x13 baking dish (I just set the pan w/ butter in the oven while I am making the crust mix). In another bowl, mix the remaining crust ingred. Until JUST combined, then pour into baking pan on top of the melted butter. NO need to mix!!! Spoon or slowly pour the filling evenly over the crust batter in the pan. DO NOT STIR!! Sprinkle the 2 Tblsp sugar over the top. Bake 1 hour. Serve with whipped cream if desired.

Hey I haven't tried these recipes myself but I typed them out from a cookbook I got from the library because I thought they would be interesting to try.

Anyways here they are. If you make them before I get to let me know if its any good.

Easy Pumpkin Squares

1 box spice cake mix
1 (16 oz) can pumpkin puree

Preheat oven to 350 degrees. In a large bowl, combine spice cake mix and pumpkin puree. With a hand mixer, beat until mixture is completely combined. Spread batter into a greased 9x13” baking dish. Bake in oven or 30 minutes, or until a toothpick inserted in the center of cake comes out clean.



Sweet Pumpkin Pie Cake

1 (29 oz) can pumpkin puree
1 (12 oz) can evaporated milk
3 eggs
1 Cup sugar
½ tsp salt
4 tsp pumpkin pie spice
1 (18 ½ oz) pkg yellow cake mix
¾ c butter melted
1 Cup chopped walnuts

Preheat oven to 350 degree. Lightly grease a metal 9x13” baking dish and set aside. In a large bowl, combine pumpkin puree, evaporated milk, eggs, sugar, salt and pumpkin pie spice. Mix well, pour batter into pan and spread evenly. Sprinkle dry yellow cake mix over batter in pan. Drizzle melted butter over cake mix and sprinkle chopped walnuts over cake mix. Bake in oven for 55 to 60 minutes or until toothpick inserted in center of cake comes out clean.

Great ideas for canned pumpkin!

I was thinking muffins too, but the cake mix recipe is new to me.

And pumpkin soup too. Mmmmmmm that sounds delicious.

Guess I'm going to be baking.

My son loves muffins, and gets an urge now and then to cook, so we will probably try those. We have also just made the pumpkin pie filling without the crust, and ladled it into pudding cups, or baked it in a muffin pan with liners as a filling.

Muffins is probably a better idea, since when we just do the filling he wants to go to the store for whipped cream, which must be piled mountain high!

These sound soooo yummy! I will be making these tomorrow! Gotta go grab some pumpkin first! lol.
Does anyone have a recipe for Pumpkin dip? I tried a friend's dip years ago...I think it had pumpkin, spices, and cream cheese. I am not sure what else...or how much. If anyone knows this recipe...I'd love it if you shared it!
