Thanks so much for all the great ideas! I've had zucchini coming out my ears all summer long so I've decided the do a zucchini theme for my cooking group today. Ofcourse, as luck would have it, we went out to the garden to get some zucchini last night and there was NONE! Just some yellow squash. So what do I do with that??
Oh, and my use for zucchini: just shred it into what ever you're making! Cake, cookies, chili, taco meat, speghetti sauce, just about anything really! Can't taste it and it adds extra veggies to the meal.
