Default Weight Watcher friendly Stockpile Recipes

Anyone have any to post? I'd love some ideas!!!

I'll start the thread with one I made last night ...

Pasta Casserole - (serves 2)

1 cup mini-penne pasta - 3 WW pts.
1/2 cup jarred Spaghetti Sauce - 2 WW pts.
1 cup diced tomatoes - 0 WW pts.
1/2 cup lean ground beef browned with onions & drained well - 3 WW pts.
Stir all ingredients together ... top with ...
4 tsp.. grated hard parmesan cheese - 1 WW pt.

This totaled 9 pts (and I figured 10 to give a little 'wiggle room' incase anything wasn't calculated exactly.)

It made two nice size servings ... so only 5 pts. per serving. I ate it with steamed broccoli and baby carrots. I probably could have made it with 2/3 cup noodles to lower that part to 2 pts. ... I ended up picking out some of mine.

The stockpile items were the pasta, spaghetti sauce, and canned tomatoes which were FREE or cost pennies with coupons ... the meat was marked down for 'last day to sell' ... and I'm sure I probably had a coupon when I bought the cheese.


I cooked the whole box of pasta and brown all the meat (1.4 lbs.) so with the rest of all the ingredients, I made two larger casserole dishes the 'regular' way for my family. (one for supper last night, and one to freeze) Only difference was that the ratio of meat/sauce/tomatoes was probably heavier on the meat and sauce than tomatoes ... and I added a sprinkling of shredded cheddar & mozzerella cheese in the middle as I layered the mixture into the dishes and I topped it with more cheese than I did mine. Eventually, I'll just make it 'my way' ... but I figure I'd better transition them slowly **

Another idea woudl be to add small diced veggies (steamed or sauteed with little or no oil in a non-stick skillet) to the mixture ... I'm sure zuchinni &/or eggplant would be good ... but I didn't have any. You could add chopped bell peppers if you like them, but I don't.
